Ramen

A simple dashi which isn’t too overpowering. Can be used in most applications.

While originally for my ramen post, this basic chicken stock can be used for all sorts of dishes.

Quick way to prepare chicken for rice or a sandwich.

Kansui is an alkaline solution. It has a variety of uses, one of them being to make alkaline noodles such as ramen. For storage’s sake I like to make it in powdered form.

Ramen Egg. The basic brine is 1:1:1, 50ml water to 50ml mirin to 50ml soy sauce.
